Squid with cumin and Côtes de Bourg Rouge Main course

Ingrédients
- 500 g of small squid
- 120 g of chorizo
- 200 ml of red wine
- a pinch of cumin
- a sprig of thyme
- 1 small onion, 1 shallot
- 2 tablespoons of olive oil
- 1 sprig of chopped parsley
- salt and pepper
Recette
- Dice the onion and shallot. Clean the squid and slice them into rings. Slice the chorizo.
- Heat the oil in a frying pan and add the onion and shallot. Fry over low heat for 5 minutes. Add the chorizo when the onions have browned. Cook for 5 minutes.
- Add the cumin and thyme, then the squid. Cook for 5 more minutes. Add the wine and let it reduce for about 5 minutes.
